Brewing Methods for Mexican Coffee
01
Traditional Mexican Coffee Pot (Olla)
To brew using a traditional Mexican coffee pot, start by heating water just before the boiling point (less than 100 degrees celsius.) Add coarsely ground coffee to the pot, typically using a ratio of 3 tablespoon of coffee for every 6 ounces of water. Pour the coffee grounds inside the Olla over the hot water, remove from the heat, cover, and let it steep for about 5 minutes. Serve hot, and enjoy the rich flavors!
02
French Press
For a French press, use a medium grind of Mexican coffee beans. Add 1 ounce of coffee for every 15 ounces of water. Pour hot water over the grounds, stir gently, and let it steep for 4 minutes. Press down the plunger slowly and serve immediately for a full-bodied cup.
03
Pour Over
Using a pour-over method, place a filter in the dripper and add medium-fine ground coffee. Use a coffee-to-water ratio of 1:16. Slowly pour hot water in a circular motion over the grounds, allowing it to bloom for 30 seconds before continuing to pour. This method highlights the coffee's unique flavors.
Essential Equipment for Brewing Mexican Coffee

1. Mexican Clay Pot (Olla)
This traditional, ancient brewing vessel is designed to enhance the flavor of the coffee. The porous clay allows for even heat distribution, resulting in a rich and aromatic Cafe de Olla brew that captures the essence of Mexican coffee culture. The traditional Cafe de Olla gets is uniqueness from the cinnamon and "piloncillo", a traditional mexican sweetener from natural sugar, added to the boiling coffee.

2. Coffee Grinder
A quality burr grinder is essential for achieving the perfect grind size. Freshly ground coffee beans release more flavor, and a consistent grind ensures optimal extraction during brewing. Above is a mechanical (by hand) grinder, rarely used any more, but the taste of the coffee is much better from it. We grind our coffees on this type of grinders.
